National Chocolate Week!

Who knew it was National Chocolate Week??

We at RIG Healthcare are partial to a bit of chocolate, in fact judging by the empty tins of Celebrations lying around the office we are very partial to a bit of chocolate!

Alice who works within our physio team is not only an excellent advisor to candidates but an awesome baker! She makes amazing brownies - trust me I've tasted them! So I have asked her to share with you her secret family recipe which is also nut free. Why not have a go at making them yourself, alternatively book a meeting with Alice to 'talk about jobs' whilst insisiting there are brownies available so you can try them out first hand :)


Chocolate Brownies

Makes around 20


  • 400g Caster Sugar
  • 225g Unsalted butter
  • 40g Cocoa Powder
  • ½ teaspoon of Vanilla extract
  • 4 Eggs
  • 225g Plain flour
  • ½ teaspoon Baking Powder
  • A pinch of salt
  • 100g Chocolate Chunks


  • Heat the oven to 180°C/ Gas Mark 4.
  • Grease and line a 23cm x 33cm baking tin.
  • Melt the butter in a large saucepan on a low heat.
  • Once melted, add the sugar the saucepan and mix in- remove the pan from heat.
  • Stir in the cocoa powder.
  • Allow the mixture to cool a little and mix in the vanilla extract and eggs. Stir until the mixture is dark and glossy.
  • Sift in the flour, baking powder and salt.
  • Now add the chocolate chunks- these can be milk, white or dark or a mixture of all three.
  • Pour the brownie mixture into the tin and allow the mixture to settle evenly.
  • Bake the brownies for 20-25 minutes.
